Homemade Chewy Fudgy Brownie Cookies

Ah, just look at that chewy, fudgy centre

Brownies and cookies are two of my favourite things and when put together they're a dreamy combo. 

In todays Sunday Bake I'm going to share with you my favourite type of cookie inspired by Fairytale Brownies an American brand selling premium, all-natural gourmet brownie gifts. 

It's really important that you have the right amount of product as the ingredients below state to get that fudgy melt-in-the-mouth brownie texture in these cookies.

Ingredients (makes 18-20 cookies)
113 grams (1/2 cup) butter, softened
105 grams (1/2 cup) light brown soft sugar
50 grams (1/4 cup) castor sugar (or white granulated sugar)
1 medium egg
1 tsp vanilla extract
130 grams (1 cup) plain flour (all purpose flour)
30 grams (1/4 cup) cocoa powder (I used Cadbury Bournville Cocoa Powder for Baking)
1/2 tsp baking powder
1/8 teaspoon (or a pinch of) salt
260 grams (1 and 1/2 cup) white chocolate chips or chunks


I added more white chocolate chips to decorate straight after taking the cookies out of the oven



Instructions

1. Preheat oven to gas mark 4 / 177°C / 350°F. Grease and line two baking trays with parchment paper.

2. Beat the butter and sugars until light and fluffy.  

3. Beat in egg and vanilla extract until incorporated.  

4. Sift the cocoa powder into a bowl of plain flour, baking powder, and salt and mix.

5. Sift the mixed dry ingredients into to the mixture and gently fold in. Then fold in the the chocolate chips.

6. Roll batter into balls leaving 2 inch space in between (should be able to fit 9 cookies in one tray)

7. Bake for 8 - 10 minutes or until the cookies are soft in the centre but still malleable (not hard) around the edges. Remember we are making brownie cookies and want them to be really soft. 

8. Remove the tray from oven and leave on the baking sheet for about 5 minutes. The cookies are still baking on their own. Then remove the cookies to a wire rack to cool completely. 

Place tray near the top of the oven
